Banana Bread Cookies

Thanks to millenials all around the world (and instagram), I made banana bread for the first time this year. Yes, you read that right. I hate bananas but I loovvee banana bread, more than words can express



I also love cookies, so I thought what's better than combining both of them and getting the best of both worlds? If you love cookies that are chewy on the inside and crisp on the outside and obviously love banana bread, then i've got no doubt, you'll surely love these :)


It has banana bread's chewy texture and a cookie's deliciousness... And I mean look at all those chocolate chips, agh, heaven... They are also pretty healthy, I mean that's gotta another plus point.



For 12 cookies


INGREDIENTS

1T butter, softened

3T brown sugar

1T white sugar

1 medium-sized banana or 2 small bananas

1 egg, room temperature

1-1/4t baking soda

1t baking powder

1-1/2 cup all purpose flour, oats flour, spelt flour,etc (180gm)

1t Vanilla extract

1/4 cup Chocolate chips

oil for greasing


Directions

1. In a large mixing bowl, cream together butter, white sugar and brown sugar for about 2mins or until fluffy and pale in colour

2. Add in your egg and vanilla extract and mix well. In another bowl, mash your banana using a fork, add the banana in your butter and egg mixture and mix well.

3. Sift in your flour, baking powder and baking soda and mix well. Using a spatula, gently fold in your chocolate chips. The batter will be very sticky so refrigerate for atleast 30 mins.

4. Preheat your oven to 350°F. Line your baking tray with parchment paper.

5. Grease an ice cream scoop and scoop out your dough on the baking tray leaving at least a 2 inch gap between the cookies.

6. Bake the cookies for 15-17mins.

7. Allow the cookies to cool for 10mins, then transfer them onto a wire rack to finish cooling.
