Soft and fudgy in the center, with a chewy and crispy exterior and most importantly a crinkly brownie top, they’re outrageously good. HOW TO MAKE THESE BROOKIES?
These Brownie Cookies are so easy to make. You don't need an electric mixer, just a bowl and a spoon. But you need to chill the dough for at least 20 minutes to ensure that they do not spread
Start by melting together the dark and butter in the microwave.
After you stir together the chocolate and butter, add the sugar and eggs and mix.
Finally, add flour, cocoa powder, baking powder and salt.
I highly recommend measuring your flour and cocoa using a kitchen scale for the most accurate results. It’s so easy to over-measure dry ingredients like flour when using cup measurements. Too much flour and your cookies will be thicker, dry in texture and not spread as much in the oven.
By now, your cookie batter will be thick and chocolatey. Cover it and chill it in the refrigerator to ensure those crisp edges
Bake cookies for 12-13 minutes or so until the cookies have spread out and crackled on top. Keep in mind that these cookies will be very fragile when they come out of the oven – leave them to cool COMPLETELY before attempting to move them.

INGREDIENTS:
1 cup (150g) Semi-sweet chocolate, roughly chopped
6T (85g) Unsalted butter
3/4 cup (150g) Granulated sugar
1/4 cup (50g) Brown sugar
2 eggs
3/4 cup (90g) All purpose flour
1/2 cup (50g) Cocoa powder
1/2t Baking powder
1/8t Salt
Optional: Flaky salt for decoration
DIRECTIONS:
Add chocolate and butter to a heatproof bowl and heat in the microwave, stirring every 30 seconds, until melted and smooth.
Add sugar and eggs and stir together until smooth. Sift in flour, cocoa powder, baking powder and salt and stir until a smooth brownie-like batter forms.
Cover the cookie dough and let it rest in the refrigerator for at least 20 minutes
Preheat the oven to 350°F (177°C). Line two trays with parchment paper.
Using a greased tablespoon measure spoon out 1T cookie dough balls and place them on the lined sheet
Leave room for the cookies to spread as they bake. Place in the oven for 12-13 minutes or until cookies have spread out and cracked on top.
Leave cookies on baking trays to cool completely before eating. Sprinkle with sea salt.

NOTES:
Make ahead & freezing instructions: You can make the cookie dough and chill it in the refrigerator for up to 4 days (step 4). Baked cookies freeze well for up to 3 months. Unbaked cookie dough balls freeze well for up to 3 months. Just bake the cookie dough balls for an extra minute, no need to thaw.
