1/4 cup (65 g) Heavy whipping cream, cold
Optional topping: 1/4 cup Heavy whipping cream, 1/4t Vanilla extract, 1t Cocoa powder, 2T Chocolate Shavings, 2T choice of liqueur, 1-2T espresso, 1/4t Vanilla extract, 1/4t Peppermint extract, etc.
DIRECTIONS:
In a microwave-safe bowl, heat 1/4 cup of the heavy cream for 50 seconds (depending on microwave strength).
Add the chocolate to the cream and stir until the chocolate has melted. This will take 1-2 minutes. Set aside to cool.
Pour 1 cup and 6T of heavy cream into a medium bowl. Using a hand-held or stand mixer, beat until stiff peaks form. (if you want to add some additional flavorings, add in this step)
Slowly fold in half the whipped cream into the chocolate mixture with a large spatula. Gently fold in the rest of the whipped cream.
Divide the mixture between 4 ramekins or cocktail glasses. Refrigerate for at least one hour, (up to overnight), before serving. Top with more whipped cream and chocolate shavings.
