Well, this blog and page is named "mostly" sweet for reason (other than my attitude).
As much as I enjoy sweets, occasionally I do love myself some cheese too, because what is life without carbs?
This garlic and cheese babka wreath is indescribable!! So crispy of the outside and sooooo soft on the outside. With the perfect balance of garlic and herb and cheese. And yes, it has eggs and yeast :(
It might be time consuming, mostly due to the rising time, but other than that it is super easy and quick!! And oh so worth it!!
INGREDIENTS:
Dough:
2-1/2 cups (300gm) All purpose flour,
1t Salt
1t Sugar
1 cup Milk
2-1/2t Instant yeast
1 egg yolk
1/2 stick (56gm) Salted butter
Filling:
1/2 stick butter (56gm) Salted butter
7-8 cloves of Garlic
1T Dried herbs of choice
1/4 cup Grated mozzarella cheese
DIRECTIONS:
1. In a medium sized bowl, whisk together flour, salt, sugar and set aside.
2. Add the milk in a heatproof bowl. Microwave or use the stove and heat until the milk is warm to touch (about 110°F). Add in the yeast and mix well, let it sit aside for 5-10mins.
3. Pour the milk-yeast mixture into the dry ingredients along with the egg and mix together to form a soft dough or use your mixture. Add in your room temperature butter in 2 parts and mix for another 10 mins.
4. The dough should not be sticky, but if it is, flour your surface and hands and knead the dough for 3 mins. Place in a lightly greased bowl, cover loosely, and let rest for about 2 hours or until it doubles in size.
5. Meanwhile, finely mince or crush your garlic and in a heatproof bowl, add in your butter and melt it, add in the dried herbs and the garlic and mix well.
6. After the dough has doubled in size, punch the dough and roll it into a 12x14 inch rectangle. Spread the softened garlic and herb butter leaving 1/2 inch space from the edges. Sprinkle the cheese on top of the butter and roll up the dough tightly from the longer side towards you.
7. Keep the dough in the freezer for 10mins. This will make it easier to cut the dough and shape it
8. After 10 mins, take the dough out, and cut it laterally. Braid the 2 pieces together and make the ends meet.
9. Place the wreath on a greased oven tray or line it with parchment. Put the wreath on it, lightly cover it and let it rise for another 20mins.
10. Meanwhile, preheat the oven to 350°F.
11. Bake the bread for 40 mins and then cover it with foil if the cheese is browning to quickly and bake for another 10mins.
12. Remove from the oven and let cool 10mins in the pan before turning out to cool on a wire rack
