No- Bake Mousse Bars

These no-bake chocolate bars are every chocolate lover's dream. It requires no baking time, has two layers of chocolate, and one smooth decadent bite that is simply unforgettable.

If there is anything I love most in this world, aside from my family, it is chocolate. Chocolate is one of my absolute favorite things to eat, period! I am typically a milk chocolate person and depending on how dark the dark chocolate is, that would be fine too. In any case, I find chocolate to be simply irresistible and I love just about any chocolate dessert there is. The amount of chocolate I go through every month is a little bit scary, to be honest...

Ingredients for the Mousse Bars

You barely need 5 ingredients for this!!

for the base: Your choice of cookies (i used oreos) and melted butter

for filling: Cold heavy whipping cream, cocoa powder or chocolate (read notes at the end), powdered sugar

for topping: Cocoa powder

So, let's get started.

How to make the mousse bars

  1. Mix Oreo crumbs with melted butter. Let it chill

  2. Whip heavy cream, cocoa powder and sugar until stiff peaks*

  3. Add the mousse mixture onto the base, chill overnight.

  4. Top with a dusting of cocoa powder

And just like that you're done

Yield: 9-16 bite-sized pieces


INGREDIENTS:

For the base:

16 oreo (1-1/3 cup crumbs)

1/4 cup (56g) Melted butter


For the filling**:

1-1/2 cup (360ml) Heavy whipping cream, cold

1/3 cup (33g) Cocoa powder

3T (38g) Sugar


Assembly:

2T Cocoa powder


INSTRUCTIONS:

For the base:

  1. Line a 8 x 8 baking pan with parchment paper with a slight over-hang, lightly spray with non-stick cooking spray.

  2. Combine crushed Oreo cookies with melted butter until all crumbs are moistened. Press crumb mixture into the bottom of prepared pan. Set aside.

  3. Let it chill in the fridge until the filling is being prepared.

  4. Add cocoa powder and sugar to the heavy cream and beat it until stiff (as stiff as you can get it to go before it becomes butter) peaks form.

  5. Add all the filling onto the chilled cookie crumb base. Let it set overnight.

  6. Dust with cocoa powder before serving.


NOTE:

**These mousse bars are extremely light, so if you would like more decadent bars, Melt together 180g of chocolate with 360ml of heavy cream (essentially making ganache). Let it chill and set for several hours. Whip it at high speed until stiff peaks then add it to your cookie base and let it set overnight.
