A year ago, the banana bread "TREND" started.. So happy birthday... SO for it's birthday, I bring to you the best, moistest, chewiest and the softest banana bread ever. Take less than 10 mins to bring together, comes together in a bowl and is super customizable, if that doesn't check all your boxes, I don't know what would.
This recipe is super customizable… Don't wanna add chocolate, don't, add nuts or maybe even nothing. You can sub oil for the same amount of coconut oil or butter. Also, I did not try the recipe with flax eggs but I don't see why it won't work!!!
INGREDIENTS:
1 egg
1/4 cup (50g) Brown sugar (can sub for white sugar)
1/4 cup (50g) White sugar (can sub for brown sugar)
3 medium bananas
1/4 cup (64g) Vegetable oil (or melted butter)
1t Vanilla extract
1 1/2 cup (180g) All purpose flour
1t Baking soda
1/4t Salt
1 cup worth mix-ins (nuts, chocolate chips, etc)
DIRECTIONS:
Preheat oven to 180 C (350 F). Grease and line a loaf pan.
In a large mixing bowl, beat the egg and sugars with an electric mixer until light and fluffy. Add vanilla, bananas and oil and continue to beat until the bananas are mashed and the mixture is nicely mixed. Sift in flour, salt and baking soda. Gently fold until batter starts to come together.
Halfway through mixing, add the chocolate chips (or nuts) and finish mixing, but DO NOT OVER-MIX
Pour all the batter into your prepared tin and spread out as even as possible. Add a few extra chocolate chips on the top.
Bake for 55-60 minutes or until a toothpick inserted comes out clean and the top is golden brown. Let cool completely on a wire rack.
