Walnut Brownies

These babies are significantly better than the boxed variety. They also happen to be quick and easy to put together. By now you all should know I love chocolate and hate overly sweet brownies, no hate to anyone who likes it.. But imagine: a chewy fudgy brownie, with hints of coffee and dark chocolate with crunchy walnuts!!!! Dream come true right?

These Homemade Walnut Brownies are super easy to make - your mixer does all the work for you!

  • Melt your chocolate and butter - Melt chocolate and butter over a bain-marie or in the microwave until smooth and let it cool down.

  • Whipping eggs and sugar - Whip you room temp eggs and sugar till light and fluffy and doubled in volume, this ensures a signature crackly top.

  • Mixing all the ingredients - Gently fold in your chocolate and butter mixture, then fold in your dry ingredients and walnuts

  • Bake- Pour the batter into an 8x8 inch tin lined with parchment and non-stick spray and top with some extra walnuts and bake for 18-20 minutes

That's it, they take less than 10 minutes to prepare and within 40 minutes you have a batch of delicious brownies ready to be demolished.


Yield: 16 pieces

Ingredients:

6T (85g) Unsalted butter, room temperature

1/2 cup (75g) Chocolate, chopped

2 eggs, room temperature

2T Milk

1 cup (200g) Brown sugar

1t Vanilla extract

1/4t Salt

3/4 cup (90g) All purpose flour

1/2t Baking powder

2t Coffee powder

1/2 cup (100g) Roasted Walnuts


Directions:

  1. Preheat oven to 180 C (350 F). Grease and line an 8-inch square baking tin.

  2. Melt chopped chocolate and butter over bain-marie or in the microwave until smooth and let it cool down.

  3. In a large mixing bowl, beat eggs and sugar till light and fluffy. Then add the vanilla extract, butter and chocolate concoction and milk, mix gently until well combined. Sift in salt, flour, coffee powder and baking powder and fold until batter starts to come together.

  4. Add the walnuts (you can reserve a handful) and fold through. Place all the batter into your prepared tin and press down and spread out as even as possible sprinkle the remaining walnuts over the batter.

  5. Bake blondies for 18-20 minutes.

  6. Let brownies cool for a few minutes, then transfer to the fridge to cool completely in the pan. Store in the fridge for maximum fudginess!
